Chunky Monkey Oatmeal

Whether it’s your rainy day comfort food or fuel to power your morning workout, you just can’t go wrong with oatmeal. So why not jazz it up and try a new style?

With all the rain this summer, I have been on an absolute oatmeal binge. It’s just so warm and comforting on those cold mornings! This style in particular has become my favorite and gets me super excited to make breakfast in the morning! Plus it’s a great morning workout meal for when you feel you deserve to treat yourself with something healthy and delicious!

These Chunky Monkey oats only take minutes to make and are a combination of some of my all-time favorite breakfast ingredients: Peanut butter, banana, and chocolate chips! It’s also made with almond milk and flax seed, so you’re getting a total health kick with the taste of a guilty pleasure.


Try out this creation next time you’re craving oatmeal and let me know how you style your oats!

What You’ll Need:

  • 3/4C Almond Milk [or water]
  • 1/2C Old Fashioned Oats
  • 1 Banana [Sliced/Chunked]
  • 1 [Generous] Spoonful of Peanut butter
  • 1Tbsp Ground Flax Seed
  • 1-2Tbsp Honey
  • 1Tbsp Chocolate Chips
  1. In a small pot, combine almond milk, oats, banana, peanut butter, and flax seed. Pro-Tip: I like to cut my banana in half and chunk half of it into the pot and slice the other half to top with at the end!
  2. Cook on medium heat, stirring occasionally to keep from sticking, until smooth consistency, or until mixture begins to boil.
  3. Reduce heat and stir in honey until smooth
  4. Remove from heat and transfer to bowl. Top with remainder of banana and chocolate chips
