Sweet Potato Black Bean Tacos

When tacos are life, but you wanna live that life long enough to eat all the tacos!

I owe my obsession with this creation entirely to a little cafe just outside my town. While a bit fancier with definitely more ingredients, their veggie tacos inspired me to start experimenting with my own take on sweet potato black bean tacos.


These guys are the perfect savory taco; a little sweet, a little spice, and overall delicious. They also just happen to check off every box on my list when it comes to whipping up some food; they’re basically the holy trinity of food:

  • They’re Easy to Make. <10 mins from prep to plate
  • They’re Healthy. Sweet potatoes+black beans+mixed greens
  • They’re Delicious! Chipotle sour cream, need I say more?

If you’re anything like me, no matter how healthy you eat, you still absolutely love tacos! I’m happy to report, my love for tacos is unchanged.

These delicious tacos make you forget you’re even eating something healthy. With diced sweet potatoes for healthy carbs, black beans for protein, and mixed greens, this hearty recipe gives you a well-balanced meal with minimal preparation and a great taste.

This meal is completely customizable based on your personal tastes, such as what chopped veggies you want to add or which spices are your favorite [I personally love some red pepper flakes for a little kick!] I’ve also taken to making my own chipotle sour cream after being hooked by the cafe’s original, but I know some will prefer original sour cream.

What You’ll Need:

  • 1 Medium Sweet Potato
  • 1 Can Drained Black Beans
  • Preferred Chopped Veggies [Red/Green Peppers, Onions, Tomatoes, Corn etc.]
  • Mixed Greens [Lettuce, Spinach, Arugula, etc.]
  • 2 Tortillas
  • 1/2 Tablespoon Olive Oil
  • Optional: Red Pepper Flakes for spice

Chipotle Sour Cream:

  • 1 Spoonful Sour Cream
  • 1 Tablespoon Chipotle Ranch
  1. Prepare Your Sweet Potato: Dice potato to your preferred size and cook in the microwave for 3-5 minutes until soft. When ready, toss your diced sweet potato in a medium pan with the olive oil. Stir occasionally and cook until browned (5-10 minutes)
  2. Mix in Veggies: Stir in drained black beans, chopped peppers, onions and/or corn. Add preferred spices. Continue cooking for another 3-5 minutes
  3. Chipotle Sour Cream: In a small cup, mix sour cream and chipotle ranch. Adjust to taste.
  4. Assemble tacos: Spread chipotle sour cream on tortillas. Lay down mixed greens. Top with your sweet potato+black been mixture.
  5. Devour and go back for more!
